Mashing the yam |
1 bowl yam/ taro cut into small cubes (big bowl used to drink soup)
3/4 cup pork lard (I used olive oil as a healthier replacement but or ni did not turn out smooth)
1 cup sugar
3 tbsp coconut juice
1 tbsp corn flour
1 can ginko nuts
Steps:
- Steam yam for around 20mins/ or till yam turn soft
- Mash up the yam with a fork
- Heat up pork lard, place mashed yam in the oil and start folding in (you will see the yam absorbing all the oil)
- Once all the oil is being absorbed into the yam, slowly add in the sugar. Abit at a time and taste as you add so that you can stop the once the sweetness is to your liking
- Add in the coconut juice
- Add in the corn flour
- Serve with ginko nut on top
